EASY HEALTHY LUNCH RECIPE

Today's post is a very easy lunch recipe. Two days ago, I posted a short video on my Instagram page but promised to give you my recipe here.  It literally took me less than 15 minutes to make from start to finish, including prep time. If you're in a rush and you want a low calorie yummy, healthy and light lunch option, this is the perfect lunch idea for you. The beauty you're looking at is of course an extra lean mince meat home made naked burger on a bed of rocket salad with a side of no-fat bacon and beetroot, topped off nicely with a poached egg. 



MAKING THE NAKED BEEF BURGER

Rather than buying a beef burger straight off the shelf which has lots of fat (usually 15% and above) and a lot of unnecessary added extras, I bought the extra lean mince meat (less than 5% fat) and made a burger myself. I mixed a 500g pack of mince with one egg, some white onions, garlic and salt. I honestly feel these are the basic essentials however as you might be aware, I actually enjoy eating a lot of spice so I didn't stop there - I added a little bit of chilli, curry powder and a sprinkle of coriander. The beauty of making your own burger is you really can spice it to your taste. I made some of it into meatballs to make a different meal for E (meatball curry with potatoes and veg) and then I left the rest of the mixture in the fridge overnight. 

The next day, at lunch, I simply brought it out of the fridge and squished them into burgers. It was so simple to make this and I would be more than happy to make a video on this if you would like to see one (if you do, let me know in the comments section below). You can make your burgers as thick or flat as you want - totally up to you. 

I used a non-stick pan to 'dry fry' my burgers - again the trick being to cook on a very low heat so they don't actually burn the outside and leave the inside uncooked. Make sure you flip them every 10-15 seconds. I like my burgers well done and as you can see, they look extra roasted. This entire process took about 4minutes.



THE BACON, POACHED EGG AND BEETROOT

With the bacon, I simply cut out all of the visible fat, only leaving me with the main bit in the middle and I also dry fried in the same non-stick pan as the naked burgers. I poached my eggs for 5 minutes on high heat using an egg poacher which is simply a shallow frying pan with an egg mould (this gives it that perfect, round shape) and the beetroot was simply chopped in less than 30 seconds as it was already pre-packaged in vinegar.

This meal was so yummy with just a little bit of chilli sprinkled on top, however, E was working from home too and I made him a plate and sprinkled his with a mixture of olive oil and balsamic vinegar! It looked really nice and he loved it!
